Ingredients
- 8 oz pasta
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 eggplant, diced
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper, to taste
- 2 cups rocket leaves
- 1/4 cup grated Parmesan cheese
Instructions

Cook the pasta according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat.

Add the diced onion and minced garlic. Cook until softened.

Add the diced bell peppers, zucchini, and eggplant. Cook until vegetables are tender.

Stir in dried basil, dried oregano, salt, and pepper. Cook for an additional 2 minutes.

In a large mixing bowl, combine the cooked pasta, ratatouille mixture, and rocket leaves. Toss well.

Serve the pasta salad with a sprinkle of grated Parmesan cheese.
