Ingredients

  • 1 whole chicken, cut into parts
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 parsnip, peeled and sliced
  • 1 bunch of fresh dill
  • Salt and black pepper to taste

Instructions

  1. In a large pot, place the chicken parts and cover with water. Bring to a boil and remove any scum that rises to the surface.

  2. Add the carrots, celery, onion, garlic, parsnip, and half of the dill to the pot. Season with salt and pepper.

  3. Reduce the heat to low and let the soup simmer for about 2 hours, or until the chicken is tender and the flavors are well combined.

  4. Remove the chicken from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.

  5. Taste the soup and adjust the seasoning if needed. Chop the remaining dill and add it to the soup.

  6. Serve the Jewish chicken soup hot, garnished with fresh dill.
