Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a small bowl, combine the olive oil, lemon juice and zest, minced garlic, dried oregano, salt, and pepper.

  3. Place the chicken breasts on a baking sheet and brush them with the lemon-garlic mixture.

  4. Arrange the cherry tomato halves around the chicken breasts.

  5. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the tomatoes are roasted.

  6. Remove from the oven and let it rest for a few minutes.

  7. Serve the chicken topped with fresh basil leaves.
