How To Make Summer-in-winter chicken

Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh basil leaves
Instructions

Preheat the oven to 425°F (220°C).

In a small bowl, combine the olive oil, lemon juice and zest, minced garlic, dried oregano, salt, and pepper.

Place the chicken breasts on a baking sheet and brush them with the lemon-garlic mixture.

Arrange the cherry tomato halves around the chicken breasts.

Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the tomatoes are roasted.

Remove from the oven and let it rest for a few minutes.

Serve the chicken topped with fresh basil leaves.
