Ingredients
- 4 chicken breasts
- 1 eggplant, diced
- 1 zucchini, diced
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 1 onion, sliced
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a large baking dish, place the chicken breasts and season with salt and pepper.

In a separate bowl, combine the diced eggplant, zucchini, bell peppers, onion, garlic, olive oil, dried thyme, dried oregano, dried basil, salt, and pepper. Toss to coat the vegetables evenly.

Arrange the vegetable mixture around the chicken breasts in the baking dish.

Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender.
