How To Make Fish Tagine with Saffron & Almonds

Ingredients
- 4 white fish fillets
- 1 teaspoon saffron threads
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground paprika
- 1 cup vegetable broth
- 1/4 cup sliced almonds
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large tagine or deep skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until soft and translucent.

Add the saffron, cumin, coriander, and paprika to the onion mixture. Stir well to combine the spices.

Place the fish fillets on top of the onion mixture in the tagine. Pour the vegetable broth over the fish.

Cover the tagine and simmer for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

While the fish is cooking, toast the sliced almonds in a dry skillet until golden brown. Set aside.

Season the fish with salt and pepper to taste. Sprinkle the toasted almonds over the top.

Garnish with fresh cilantro and serve hot with couscous or crusty bread.
