How To Make Herby Broccoli & Pea Soup

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 broccoli head, chopped
  • 1 cup frozen peas
  • 4 cups vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

  2. Add the chopped broccoli and frozen peas to the pot, and cook for another 5 minutes.

  3. Pour in the vegetable broth, and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, until the vegetables are tender.

  4. Remove the pot from the heat and let the soup cool slightly. Using an immersion blender, blend the soup until smooth.

  5. Stir in the chopped parsley and mint, and season with salt and pepper to taste.

  6. Serve the herby broccoli & pea soup hot, garnished with additional fresh herbs if desired.
