Serves:

Ingredients

  • 4 cups chicken or vegetable broth
  • 1 cup sliced mushrooms
  • 1/2 cup bamboo shoots
  • 1/2 cup tofu, cubed
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon chili sauce
  • 1 tablespoon cornstarch
  • 2 eggs, beaten
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, bring the broth to a simmer.

  2. Add mushrooms, bamboo shoots, and tofu. Cook for 5 minutes.

  3. In a small bowl, whisk together soy sauce, rice vinegar, chili sauce, and cornstarch. Add to the pot and simmer for another 5 minutes, until the soup thickens slightly.

  4. Slowly pour beaten eggs into the soup while stirring gently. Cook for 1 minute.

  5. Stir in sesame oil and season with salt and pepper.

  6. Serve hot, garnished with chopped green onions.
