How To Make Vegan Keto Chia Seed Pudding Recipe
Creamy and flavorful low-carb and high-fat pudding with chia seeds and coconut milk that will satisfy your sweet tooth.

Ingredients
- 1 cup unsweetened coconut milk
- 1/4 cup chia seeds
- 1/4 cup unsweetened shredded coconut
- 1 tsp vanilla extract
- 1/4 tsp Stevia or other low-carb sweetener
- 1/4 tsp cinnamon powder
- A pinch of salt
Instructions

In a mixing bowl, whisk together coconut milk, chia seeds, shredded coconut, vanilla extract, Stevia, cinnamon powder and salt.

Keep whisking for 2 minutes to blend everything evenly.

Leave the mixture for 10-15 minutes to allow the chia seeds to thicken the pudding.

After 10-15 minutes, whisk the mixture again and divide it into small bowls or cups.

Refrigerate for a minimum of 2 hours until the pudding sets.

Garnish with some extra shredded coconut or sliced almonds and serve chilled.
