How To Make Vegan Keto Broccoli Soup

Creamy and delicious broccoli soup that’s vegan and keto-friendly!

Ingredients

  • 1 head of broccoli, chopped
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups of vegetable broth
  • 1 cup of full-fat coconut milk
  • Salt and pepper, to taste
  • 2 tbsp of olive oil

Instructions

  1. In a large pot, sauté onion and garlic in olive oil until soft.

  2. Add broccoli and vegetable broth, bring to a boil and then let it simmer for 10-15 minutes or until broccoli is tender.

  3. Use an immersion blender to blend soup until smooth.

  4. Stir in coconut milk and season with salt and pepper.
