How To Make Vegan ‘Cheesy’ Leek Crumble

Ingredients
- 2 leeks, sliced
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 cup breadcrumbs
- 1 cup vegan cheese, grated
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions

Preheat the oven to 375°F (190°C).

Heat the olive oil in a pan over medium heat. Add the onion and garlic, and sauté until softened.

Add the leeks and cook until they are tender.

In a bowl, combine the breadcrumbs, vegan cheese, dried thyme, salt, and pepper. Mix well.

Spoon the leek mixture into a baking dish. Sprinkle the crumble mixture evenly over the top.

Bake for 20-25 minutes, or until the top is golden brown and crispy.
