Ingredients

  • 2 leeks, sliced
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup breadcrumbs
  • 1 cup vegan cheese, grated
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Heat the olive oil in a pan over medium heat. Add the onion and garlic, and sauté until softened.

  3. Add the leeks and cook until they are tender.

  4. In a bowl, combine the breadcrumbs, vegan cheese, dried thyme, salt, and pepper. Mix well.

  5. Spoon the leek mixture into a baking dish. Sprinkle the crumble mixture evenly over the top.

  6. Bake for 20-25 minutes, or until the top is golden brown and crispy.

  7. Serve hot and enjoy!
