Serves:
Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp cumin powder
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 1 cup low-sodium chicken broth
- 1 cup canned diced tomatoes
- 1 red bell pepper, chopped
- 1/2 cup plain low-fat Greek yogurt
- Salt and pepper to taste
Instructions

Heat olive oil in a large skillet over medium heat.

Add onions and cook until soft, about 5 minutes.

Add garlic and ginger and cook for another 1 minute.

Add chicken, curry powder, cumin, paprika, turmeric, cinnamon, and cayenne pepper. Stir well to coat chicken evenly.

Add chicken broth, tomatoes, and red bell pepper. Bring to a boil, then reduce heat to low and simmer for 30 minutes, stirring occasionally.

Remove from heat and stir in Greek yogurt. Add salt and pepper to taste.
