Ingredients

  • 1 cup unsweetened almond milk
  • 1/4 cup chia seeds
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tbsp shredded coconut (optional)

Instructions

  1. In a medium bowl, whisk together almond milk, chia seeds, honey/maple syrup, and vanilla extract.

  2. Cover and refrigerate for at least 2 hours (or overnight) to allow chia seeds to absorb the liquid and thicken the pudding.

  3. Once pudding has thickened, spoon a layer of pudding into serving cups.

  4. Add a layer of mixed berries on top of the pudding.

  5. Repeat layering until all pudding and berries are used.

  6. Sprinkle shredded coconut on top (optional).
