Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 1/2 cup vegetable broth
- 2 mackerel fillets, cut into chunks
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Heat oil in a large pot over medium heat.

Add onion and garlic, stirring occasionally, until softened.

Stir in paprika and cumin, cooking for 1 minute.

Add chickpeas, tomatoes, and broth, bringing to a boil.

Reduce heat to low and let simmer for 10 minutes.

Add mackerel fillets and cook until fish is firm and opaque.

Season with salt and pepper to taste.

Serve hot, garnished with fresh parsley.
