Ingredients

  • 4 salmon fillets
  • 2 tbsp lemon juice
  • 2 tsp lemon zest
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 8 large lettuce leaves
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped peanuts (optional)

Instructions

  1. In a small bowl, combine lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper.

  2. Place the salmon fillets in a shallow dish and pour the lemon mixture over them. Let marinate for 10 minutes.

  3. Heat a grill pan or skillet over medium-high heat. Cook the salmon fillets for 4-5 minutes on each side, or until cooked through.

  4. Remove the salmon from the heat and let cool slightly. Use a fork to flake the salmon into small pieces.

  5. Arrange the lettuce leaves on a serving platter. Spoon the flaked salmon onto each lettuce leaf.

  6. Sprinkle chopped cilantro, mint, basil, and peanuts (if using) over the salmon.

  7. Serve the lettuce wraps immediately and enjoy!
