How To Make Sweet Chilli Tofu with Pineapple Stir-Fried Noodles

Ingredients
- 1 package of firm tofu, diced
- 3 tablespoons of soy sauce
- 2 tablespoons of sweet chili sauce
- 2 tablespoons of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 2 cloves of garlic, minced
- 1 cup of pineapple chunks
- 250 grams of noodles (such as rice noodles or egg noodles)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions

In a bowl, mix together the soy sauce and sweet chili sauce. Add the diced tofu and marinate for 10 minutes.

Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the tofu and cook until golden brown, about 5 minutes on each side. Remove from the pan and set aside.

In the same pan, heat another tablespoon of vegetable oil. Add the sliced bell peppers and onion, and cook until they start to soften, about 3-4 minutes.

Add the minced garlic and cook for another minute. Then, add the pineapple chunks and cook for another 2 minutes.

Meanwhile, cook the noodles according to the package instructions. Drain and set aside.

Add the cooked noodles to the pan with the vegetables and pineapple. Stir in the remaining tablespoon of soy sauce and season with salt and pepper to taste.

Finally, add the cooked tofu back to the pan and gently toss everything together to combine.

Serve the sweet chili tofu with pineapple stir-fried noodles hot, garnished with chopped green onions.
