Ingredients

  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 1 small head of cabbage, thinly sliced
  • 1 cup walnuts, roughly chopped
  • 2 cloves of garlic, minced
  • 1/2 tsp red pepper flakes
  • Salt, to taste
  • Parmesan cheese, for serving

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat.

  3. Add the sliced cabbage and cook until softened, about 5 minutes.

  4. Stir in the walnuts, minced garlic, and red pepper flakes. Cook for another 2-3 minutes, until fragrant.

  5. Add the cooked penne pasta to the skillet and toss to coat everything evenly.

  6. Season with salt to taste.

  7. Serve hot, topped with freshly grated Parmesan cheese.
