How To Make Microwave Sweet Potato & Black Bean Chilli

Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional for heat)
- Salt and pepper, to taste
- 1 cup vegetable broth
- 1 tbsp olive oil
- Optional toppings: shredded cheese, sour cream, avocado, cilantro
Instructions

In a microwave-safe bowl, combine the diced sweet potatoes, black beans, diced tomatoes, onion, garlic, chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper. Stir to combine.

Drizzle the olive oil over the mixture and pour in the vegetable broth. Stir again.

Cover the bowl with microwave-safe plastic wrap or a microwave-safe lid, leaving a small vent for steam to escape.

Microwave on high for 10 minutes, then carefully remove the cover and stir.

Microwave for an additional 8-10 minutes, or until the sweet potatoes are tender and the chili is heated through.

Remove from the microwave and let it stand for a few minutes.
