  • 4 salmon fillets
  • 2 tablespoons harissa paste
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 cup couscous
  • 1 can chickpeas, drained and rinsed
  • Zest and juice of 1 lemon
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix together the harissa paste, olive oil, salt, and black pepper. Rub the mixture over the salmon fillets.

  3. Place the salmon on a baking sheet and roast in the preheated oven for about 12-15 minutes, or until cooked through.

  4. Meanwhile, prepare the couscous according to package instructions. Fluff with a fork and set aside.

  5. In a large bowl, combine the cooked couscous, chickpeas, lemon zest, lemon juice, and chopped parsley. Season with salt and black pepper to taste.

  6. Serve the harissa roast salmon over the lemon chickpea couscous. Enjoy!
