How To Make Hot Harissa Lamb with Couscous

Ingredients
- 1.5 pounds lamb, cut into small cubes
- 2 tablespoons harissa paste
- 2 tablespoons olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 cup couscous
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until softened.

Add the lamb cubes to the pot and brown on all sides.

Stir in the harissa paste, cumin, coriander, and smoked paprika, coating the lamb evenly.

Pour in the diced tomatoes and chicken broth. Bring to a simmer, then reduce the heat to low and cover the pot. Let it cook for 30 minutes, stirring occasionally.

In the meantime, prepare the couscous according to package instructions.

Once the lamb is tender, season with salt and pepper to taste.

Serve the hot harissa lamb over a bed of fluffy couscous. Garnish with fresh cilantro.
