How To Make Basil & Coconut Salmon with Spiced Couscous

Ingredients
- 4 salmon fillets
- 2 tbsp coconut oil
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup shredded coconut
- 1 cup couscous
- 2 cups vegetable broth
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh lemon wedges for serving
Instructions

Preheat the oven to 400°F (200°C).

Place the salmon fillets on a baking sheet lined with parchment paper.

Drizzle the salmon with coconut oil and sprinkle with chopped basil and shredded coconut.

Season with salt and pepper.

Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Meanwhile, prepare the spiced couscous. In a saucepan, bring the vegetable broth to a boil.

Stir in the couscous, ground cumin, ground turmeric, paprika, and salt to taste.

Remove from heat, cover, and let it sit for 5 minutes, or until the couscous is tender and has absorbed all the liquid.

Fluff the couscous with a fork.

Serve the basil and coconut salmon over a bed of spiced couscous.

Garnish with fresh lemon wedges.
