How To Make Grilled Mackerel with Harissa & Coriander Couscous

Ingredients

  • 4 mackerel fillets
  • 2 tbsp harissa paste
  • 1 cup couscous
  • 1 ¼ cups vegetable broth
  • 1 lemon, zest and juice
  • 1 bunch fresh coriander, chopped
  • 1 red onion, finely chopped
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a bowl, combine the harissa paste, lemon zest, and juice. Season the mackerel fillets with salt and pepper, then brush them with the harissa mixture.

  3. Grill the mackerel fillets for about 3-4 minutes on each side, until cooked through and slightly charred. Remove from the grill and set aside.

  4. In a separate bowl, pour the vegetable broth over the couscous. Cover with a lid or plastic wrap and let it sit for 5 minutes until the couscous has absorbed all the liquid. Fluff the couscous with a fork.

  5. Add the chopped coriander and red onion to the couscous. Season with salt and pepper to taste.

  6. Serve the grilled mackerel fillets on top of the harissa and coriander couscous.
