Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tsp ground cinnamon
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup couscous
  • 1 1/2 cups vegetable or chicken broth
  • 1/2 cup plain Greek yogurt
  • 1 tbsp harissa paste
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, combine the ground cinnamon, paprika, salt, and black pepper. Rub the spice mixture evenly over the salmon fillets.

  3. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Place the salmon fillets skin-side down in the skillet and cook for 3-4 minutes, or until the skin is crispy. Flip the fillets and transfer the skillet to the preheated oven. Bake for an additional 7-8 minutes, or until the salmon is cooked through.

  4. While the salmon is cooking, prepare the couscous according to package instructions, using the broth instead of water for added flavor.

  5. In a separate small bowl, mix together the Greek yogurt and harissa paste until well combined.

  6. Serve the cooked salmon over a bed of couscous, drizzle with the harissa yogurt sauce, and garnish with fresh cilantro.
