How To Make Chicken Gumbo

Ingredients
- 2 chicken breasts, boneless and skinless, cut into bite-sized pieces
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup okra, sliced
- 1 cup frozen corn
- 4 cups chicken broth
- 1 tbsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Cooked rice, for serving
- Fresh parsley, chopped, for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the chicken and cook until browned. Remove from the pot and set aside.

In the same pot, add the onion, bell pepper, celery, and garlic. Cook until the vegetables are softened.

Add the diced tomatoes, okra, corn, chicken broth, Cajun seasoning, thyme, and oregano. Stir well.

Return the chicken to the pot and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 45 minutes, or until the chicken is cooked through and tender.

Season with salt and black pepper to taste.

Serve the gumbo over cooked rice and garnish with fresh parsley.
