How To Make Tomato Juice Cocktail

A delicious concoction of plump tomatoes and juicy carrots to make an incredible tomato juice cocktail that can be enjoyed with the family! Wonderfully blended with a hint of herbs, a dash of savory and everything just comes together to create a fantastic drink.

  • 36 ripe tomatoes, large
  • 4 carrots, medium
  • 2 sweet green peppers, large, or red peppers
  • 4 stalks celery, diced, leaves included
  • 2 onions, diced
  • 1 clove garlic, minced
  • ¼ cup lemon juice
  • 2 tbsp honey, or to taste
  • ½ tsp freshly ground black pepper
  • 2 bay leaves
  • 2 sprigs fresh basil, dill, or thyme (optional)


  1. Wash the tomatoes, cut out the ends, and chop into small pieces.
  2. Scrub and grate the carrots.
  3. Core, seed, and mince the peppers.
  4. Combine all the ingredients in large enamel or stainless steel pot, and simmer over low heat for 45 to 50 minutes, stirring occasionally, until the vegetables are soft.
  5. Pick out the herbs.
  6. Strain the vegetables from the juice.


  1. Return the strained juice to the pot, and bring to a boil.

  2. Pour into hot, scalded qt. jars, leaving ½-inch headspace.

  3. Seal and process for 30 minutes at 10 pounds of pressure.


  1. Prepare the recipe as directed.

  2. Pour the juice into freezer containers, leaving ½-inch headspace, and freeze right away.

  3. To serve, thaw in the refrigerator.
