Ingredients

  • 1 pound cooked shrimp, peeled and deveined
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Juice of 4 limes
  • Juice of 1 orange
  • 1 jalapeno pepper, seeded and diced
  • 1 avocado, diced
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Instructions

  1. In a large bowl, mix together the shrimp, cucumber, tomato, red onion, cilantro, lime juice, orange juice, and jalapeno.

  2. Cover and refrigerate for at least 30 minutes or up to 2 hours to allow the flavors to meld.

  3. Before serving, stir in the diced avocado and season with salt and pepper to taste.

  4. Serve chilled with tortilla chips on the side.
