Ingredients

  • 1 cup cooked rice
  • 1 cup milk
  • 1/4 cup sugar
  • 2 eggs
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup blueberries
  • 1 pre-made tart shell

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a saucepan, combine the cooked rice, milk, and sugar. Cook over medium heat until the mixture thickens, about 10 minutes, stirring occasionally.

  3. In a separate bowl, whisk together the eggs, lemon zest, and vanilla extract. Slowly pour this into the rice mixture, stirring constantly.

  4. Stir in the blueberries and remove from heat.

  5. Pour the rice pudding mixture into the pre-made tart shell.

  6. Bake for 40-45 minutes, or until the center is set and the top is golden brown.

  7. Allow the tart to cool before serving.
