Ingredients

  • 2 medium courgettes, thinly sliced
  • 2 potatoes, peeled and thinly sliced
  • 150g feta cheese, crumbled
  • 4 eggs
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 180°C (350°F).

  2. In a large bowl, mix together the courgettes, potatoes, feta cheese, eggs, milk, and salt and pepper.

  3. Heat the olive oil in a frying pan and fry the mixture until slightly golden.

  4. Transfer the mixture to a greased baking dish and bake in the preheated oven for 25-30 minutes or until set and golden.

  5. Allow to cool slightly before serving.
