Ingredients
- 1 large celeriac, peeled and cut into wedges
- 200g mushrooms, sliced
- 2 tbsp honey
- 3 tbsp olive oil
- 4 sprigs of fresh thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 200°C (400°F).

In a large mixing bowl, combine the celeriac, mushrooms, honey, olive oil, and thyme. Season with salt and pepper.

Toss everything together until the vegetables are evenly coated.

Transfer the mixture to a baking dish and spread it out in a single layer.

Roast in the preheated oven for 40-45 minutes, or until the celeriac is tender and lightly caramelized.

Remove from the oven and let it cool for a few minutes before serving.
