How To Make Ginger Cookie Sandwiches with Lemon Mascarpone

- 1 ½ cups all-purpose flour
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ¼ cup molasses
- 1 egg
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 8 oz mascarpone cheese
- 1 tbsp lemon juice
- 1 tsp lemon zest
Instructions

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt. Set aside.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the molasses, egg, and vanilla extract. Mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll the dough into 1-inch balls and place them on the prepared baking sheet. Flatten each ball slightly with the bottom of a glass.

Bake for 10-12 minutes, until the edges are firm. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

In a medium bowl, whisk together the powdered sugar, mascarpone cheese, lemon juice, and lemon zest until smooth and creamy.

Spread a dollop of the lemon mascarpone filling onto the bottom of one cookie. Top with another cookie to make a sandwich.

Repeat with the remaining cookies and filling.
