Ingredients

  • 1 cup of Arborio rice
  • 4 cups of whole milk
  • 1/2 cup of granulated sugar
  • 1/2 teaspoon of vanilla extract
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 eggs, beaten
  • 1/4 teaspoon of salt
  • Ground cinnamon (optional)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a baking dish.

  2. In a saucepan, combine the rice, milk, sugar, vanilla extract, lemon zest, and lemon juice. Cook over medium heat, stirring occasionally, until the mixture comes to a simmer.

  3. Remove from heat and slowly whisk in the beaten eggs. Stir in the salt.

  4. Pour the mixture into the prepared baking dish and sprinkle with ground cinnamon if desired.

  5. Bake for 1 hour 30 minutes or until the top is golden and the rice is cooked through.

  6. Remove from the oven and let it cool for a few minutes before serving. Serve warm or chilled.
