Ingredients

  • 1 sheet of ready-made shortcrust pastry
  • 75g ground almonds
  • 75g caster sugar
  • 2 tbsp amaretto liqueur
  • 2 eggs
  • 50g butter, melted
  • 50g dried cranberries
  • 50g flaked almonds
  • Icing sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a tart tin.

  2. Roll out the shortcrust pastry and line the tart tin.

  3. In a bowl, mix together the ground almonds, caster sugar, amaretto liqueur, eggs, and melted butter to make the filling.

  4. Spread the dried cranberries evenly over the pastry.

  5. Pour the filling over the cranberries and smooth the top.

  6. Sprinkle the flaked almonds over the filling.

  7. Bake in the preheated oven for 45 minutes, or until golden and set.

  8. Once cooled, dust with icing sugar before serving.
