  • 125g ground almonds
  • 75g whole wheat flour
  • 40g coconut sugar
  • 2 tbsp coconut oil, melted
  • 2 eggs
  • 1 tsp almond extract
  • 125g fresh raspberries

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a tart tin.

  2. In a bowl, mix together the ground almonds, whole wheat flour, coconut sugar, melted coconut oil, eggs, and almond extract.

  3. Spoon the mixture into the tart tin and spread it evenly.

  4. Press the raspberries into the almond mixture.

  5. Bake in the preheated oven for 40 minutes or until the tart is golden brown and set.

  6. Allow the tart to cool before serving.
