Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 egg yolk
- 1 tsp vanilla extract
- 1/4 tsp salt
- Assorted Easter-themed sprinkles
- 4 lollipop sticks
Instructions

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the flour, sugar, and salt. Add the cold cubed butter and use your fingers to rub it into the dry ingredients until the mixture resembles breadcrumbs.

Add the egg yolk and vanilla extract to the mixture. Mix until the dough comes together. If the dough seems dry, add a teaspoon of water at a time until it comes together.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use a cookie cutter to cut out Easter-themed shapes.

Carefully transfer the shapes to the prepared baking sheet. Place a lollipop stick on each shape, gently pressing it into the dough to secure.

Decorate the biscuit lollies with the assorted Easter-themed sprinkles.

Bake in the preheated oven for about 12-15 minutes, or until the edges of the biscuits start to turn golden brown.

Remove from the oven and let them cool completely on a wire rack before serving.
