Ingredients

  • 4 large eggs
  • 4 medium potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until golden brown and crispy, stirring occasionally, for about 15 minutes. Add chopped rosemary, salt, and pepper and continue to cook for an additional 2 minutes.

  2. In a separate non-stick skillet, heat a small amount of olive oil over medium heat. Crack the eggs into the skillet and cook until desired doneness, about 3-4 minutes for sunny-side-up eggs.

  3. Divide the sautéed potatoes onto four plates and top each with a fried egg. Season with additional salt and pepper if desired.

  4. Serve immediately and enjoy!
