This 3-ingredient dessert is a light and healthier alternative. The chia seeds provide a nice earthy flavor and added texture to the creamy coconut pudding.

  • 1cancoconut milk
  • ½cupchia seeds
  • ¼cupmaple syrup

For Optional Garnishes:

  • coconut
  • mint sprigs


  1. In a large bowl, whisk together the coconut milk, chia seeds and maple syrup. Cover and chill for at least one hour or up to 3 days.

  2. For chocolate chia pudding, add ¼ cup of cocoa powder to the coconut milk, chia seeds, and maple syrup.

  3. Add ¾ cup smashed raspberries to the coconut milk, chia seeds, and maple syrup for raspberry chia pudding.
