Ingredients
Red Layer
- 2 cups raspberries
- 2 tbsp. brown sugar
- 1½ tbsp. lime juice
White Layer
- ¾ cups plain greek yogurt
- 4½ tbsp. heavy cream
- 3 tbsp. granulated sugar
- 3 tsp. lime juice
Blue Layer
- 2 cups blueberries
- 2 tbsp. brown sugar
- 1½ tbsp. lime juice
Instructions
- Red Layer: In a blender, combine the raspberries, sugar, and lime juice.
- Once the mixture is blended, fill the ice-pop mold ⅓ of the way.
- Wait about 30 minutes for the puree to freeze.
- Meanwhile, begin to create the white layer by whisking together the yogurt, cream, sugar and lime juice.
- Remove the mold from the freezer and top with the yogurt mixture, filling another 1/3 of the way.
- Freeze again for about 30 minutes.
- Proceed to make the final layer; blend the blueberries, sugar and lime juice together.
- Pour the puree and fill the remaining of the mold.
- Iinsert popsticle stickles through the white layer.
