Ingredients
- 1 sheet of puff pastry, thawed
- 1 cup of cooked chicken, diced
- 1/2 cup of shredded cheese
- 1/4 cup of diced tomatoes
- 1/4 cup of diced bell peppers
- 1/4 cup of diced onions
- Salt and pepper to taste
- Optional toppings: sour cream, chopped green onions
Instructions

Preheat your oven to 400°F (200°C).

Roll out the puff pastry sheet on a lightly floured surface and cut into 4 equal squares.

Place each square of puff pastry into a muffin tin, pressing it gently against the sides and bottom to form a shell.

In a bowl, combine the cooked chicken, shredded cheese, diced tomatoes, bell peppers, onions, salt, and pepper. Mix well.

Divide the chicken mixture evenly among the puff pastry shells.

Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and cooked through.
