Ingredients

  • 1 sheet of puff pastry
  • 2 leeks, thinly sliced
  • 2 potatoes, peeled and diced
  • 200g cooked ham, diced
  • 1 cup grated cheddar cheese
  • 2 eggs
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Roll out the puff pastry sheet and place it in a greased pie dish, pressing it against the edges.

  3. In a frying pan, sauté the leeks in a bit of oil until they soften.

  4. Add the diced potatoes to the pan and cook until they are just tender.

  5. In a separate bowl, whisk together the eggs and cream. Season with salt and pepper.

  6. Layer the sautéed leeks, potatoes, and diced ham on top of the puff pastry crust.

  7. Pour the egg mixture evenly over the filling.

  8. Sprinkle the grated cheddar cheese on top.

  9. Fold the edges of the puff pastry over the filling, creating a rustic border.

  10. Bake in the preheated oven for 40-45 minutes, or until the pastry is golden and the filling is set.

  11. Remove from the oven and let it cool slightly before serving.
