How To Make Winter Leaf & Parsnip Salad with Walnuts

Ingredients
- 4 cups mixed winter greens (such as kale, arugula, and spinach)
- 2 parsnips, peeled and cut into matchsticks
- 1/2 cup walnuts, roughly chopped
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 tablespoon apple cider vinegar
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

In a bowl, toss the parsnip matchsticks with 1 tablespoon of olive oil, maple syrup, salt, and pepper.

Spread the parsnips on a baking sheet and roast for 20 minutes, or until golden and crispy.

Meanwhile, in a large salad bowl, combine the mixed winter greens and walnuts.

In a small bowl, whisk together the remaining tablespoon of olive oil, apple cider vinegar, salt, and pepper.

Drizzle the dressing over the greens and toss to combine.

Once the parsnips are done, add them to the salad and gently toss to incorporate.
