  • 4 burger buns
  • 1 lb mushrooms, sliced
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1/2 cup mayonnaise
  • 4 cloves roasted garlic
  • Lettuce, tomato, and onion for toppings

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. In a large bowl, toss the sliced mushrooms with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.

  3. Grill the mushrooms for about 5 minutes until they are tender and slightly charred, stirring occasionally.

  4. While the mushrooms are cooking, prepare the roasted garlic mayo by combining the mayonnaise and roasted garlic cloves in a small bowl.

  5. Toast the burger buns on the grill for a minute or two until lightly charred.

  6. Assemble the burgers by spreading roasted garlic mayo on the bottom half of each bun, topping with grilled mushrooms, and adding desired toppings like lettuce, tomato, and onion.
