How To Make Ham, Leek & Potato Pie
This hearty pie is packed with delicious ham, leeks, and potatoes, all encased in a golden pastry crust.

Ingredients
- 1 sheet of ready-made shortcrust pastry
- 200g cooked ham, diced
- 2 leeks, sliced
- 2 medium potatoes, peeled and diced
- 1 cup of grated cheddar cheese
- 3 eggs
- 1 cup of milk
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions

Preheat the oven to 180°C (350°F) and grease a pie dish.

Roll out the shortcrust pastry and line the pie dish, trimming any excess.

In a large pan, cook the leeks and potatoes in a little bit of oil until softened.

In a separate bowl, whisk together the eggs, milk, thyme, salt, and pepper.

Spread the cooked leeks, potatoes, and ham evenly over the pastry base.

Pour the egg mixture over the filling and sprinkle with grated cheddar cheese.

Bake in the preheated oven for 35-40 minutes or until the pastry is golden and the filling is set.
