How To Make Smoked Haddock with Lemon & Dill Lentils

Ingredients

  • 4 smoked haddock fillets
  • 1 cup of green lentils
  • 2 lemons, zest and juice
  • 2 tablespoons of fresh dill, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and cook the lentils according to package instructions. Drain and set aside.

  2. Preheat the grill or barbecue to medium-high heat.

  3. In a bowl, combine the lemon zest, lemon juice, dill, onion, garlic, olive oil, salt, and pepper. Mix well to create a marinade.

  4. Place the smoked haddock fillets in the marinade, making sure they are evenly coated. Let them marinate for 10 minutes.

  5. Grill the haddock fillets for 4-5 minutes on each side, or until they are cooked through and flaky.

  6. While the haddock is grilling, heat a tablespoon of olive oil in a pan over medium heat. Add the cooked lentils and sauté for 2-3 minutes.

  7. Remove the lentils from the heat and stir in the remaining lemon zest and dill. Season with salt and pepper to taste.

  8. Serve the grilled haddock fillets over a bed of lemon and dill lentils.
