How To Make Grandma’s Butterscotch Pie

Ingredients

  • 1 9-inch pie crust
  • 1 cup dark brown sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 3 cups milk
  • 3 egg yolks, beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • Whipped cream, for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a saucepan, combine brown sugar, cornstarch, and salt. Gradually stir in milk until smooth.

  3. Place the saucepan over medium heat and cook, stirring constantly, until mixture thickens and comes to a boil.

  4. Boil for 1 minute, then remove from heat.

  5. Gradually whisk about 1 cup of the hot mixture into the beaten egg yolks, then pour the egg mixture back into the saucepan.

  6. Cook for an additional 2 minutes, stirring constantly.

  7. Remove from heat and stir in butter and vanilla extract until butter is melted.

  8. Pour the butterscotch filling into the pie crust and smooth the top.

  9. Bake in the preheated oven for 25-30 minutes, or until the crust is golden and the filling is set.

  10. Allow the pie to cool completely before serving.

  11. Serve with a dollop of whipped cream, if desired.
