Ingredients

  • 2 cups mashed potatoes
  • 1/4 cup sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large mixing bowl, combine mashed potatoes, sugar, melted butter, and vanilla extract. Mix well.

  2. In a separate bowl, whisk together flour, baking powder, and salt.

  3. Gradually add the dry ingredients to the potato mixture, stirring until just combined.

  4. Heat oil in a deep fryer or large pot to 350°F (175°C).

  5. Scoop spoonfuls of the dough and drop them into the hot oil, frying until golden brown on both sides.

  6. Remove the spudnuts from the oil and drain on a paper towel-lined plate.

  7. Dust the spudnuts with powdered sugar while still warm.

  8. Serve and enjoy!
