Ingredients

  • 2 apples
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • Vegetable oil, for frying
  • toffee coating:
  • 1 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Core and slice the apples into 1/4 inch thick rings.

  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

  3. In a separate bowl, mix together the milk and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. In a large skillet, heat about 1 inch of vegetable oil over medium heat.

  6. Dip each apple ring into the batter, allowing any excess to drip off, then carefully place it into the hot oil.

  7. Fry the doughnuts for about 2-3 minutes per side, or until golden brown.

  8. Remove the doughnuts from the oil with a slotted spoon and place them on a paper towel-lined plate to drain.

  9. In a small saucepan, combine the brown sugar, butter, heavy cream, salt, and vanilla extract for the toffee coating.

  10. Cook over medium heat, stirring constantly, until the mixture comes to a simmer.

  11. Remove from heat and let cool for a few minutes.

  12. Dip each doughnut into the toffee mixture, making sure to coat all sides, then place them on a wire rack to set.

  13. Serve the bite-sized toffee apple doughnuts warm or at room temperature.
