How To Make Chocolate Covered Cherry Cookies

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 24 maraschino cherries, drained and patted dry
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.

  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.

  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  5. Scoop 1 tablespoon of dough and flatten it with your hands. Place a cherry in the center and wrap the dough around it, forming a ball. Repeat with the remaining dough and cherries.

  6. Place the dough balls onto the prepared baking sheet and bake for 10 minutes.

  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

  8. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until smooth and melted.

  9. Dip each cookie halfway into the melted chocolate, allowing any excess to drip off. Place the cookies back on the wire rack and let the chocolate set.

  10. Enjoy!
