How To Make Chocolate Sugar Plums
Line cookie sheets or trays with waxed paper.
Melt chocolate chips in the microwave for 25 seconds. Stir and microwave in 10-second intervals as needed, stirring each time until melted.
Mix the water with the rum or almond extract.
In a medium-sized bowl, mix melted chocolate, confectioners' sugar, corn syrup and the flavored water with a wooden spoon.
Stir in wafer crumbs and pecans until blended. Shape by rounded teaspoonfuls into balls. If the mixture is too crumbly, add a tiny amount of water.
Roll in granulated sugar and place on cookie sheets to set. Store in an airtight container until ready to eat.
