- 4 egg whites
- 1 cup brown sugar
- 1/4 tsp cream of tartar
- 1/4 tsp vanilla extract
- 4 plums, pitted and quartered
- 1/2 cup red wine
- 1/4 cup granulated sugar
- Fresh mint leaves, for garnish

Preheat the oven to 200°F (93°C). Line a baking sheet with parchment paper.

In a clean mixing bowl, beat the egg whites on high speed until soft peaks form.

Gradually add the brown sugar, cream of tartar, and vanilla extract. Continue beating until stiff peaks form.

Spoon the meringue mixture onto the prepared baking sheet, forming 4 individual nests.

Bake for 2 hours or until the meringues are crisp and dry. Remove from the oven and let cool completely.

In a saucepan, combine the plums, red wine, and granulated sugar. Cook over medium heat until the plums are soft and the wine has reduced to a syrup, about 10-12 minutes.
