How To Make Lemon French Toast with Poached Plums

Ingredients
- 4 thick slices of bread (such as brioche or challah)
- 2 lemons, zested and juiced
- 4 eggs
- 1 cup milk
- 1/4 cup granulated sugar
- 1/2 tsp vanilla extract
- Pinch of salt
- 4 plums, pitted and sliced
- 1/4 cup honey
- Fresh mint leaves, for garnish
Instructions

Preheat a griddle or non-stick skillet over medium heat.

In a shallow dish, whisk together the lemon zest, lemon juice, eggs, milk, granulated sugar, vanilla extract, and salt.

Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.

Place the soaked bread slices onto the preheated griddle or skillet and cook for 2-3 minutes per side, or until golden brown and crispy.

In a separate saucepan, combine the sliced plums, honey, and a splash of water. Cook over medium heat until the plums are soft and the liquid has thickened slightly, about 5 minutes.
