Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 1 cup ube halaya (purple yam jam)
- 1 cup cream cheese
- 1/2 cup sugar
- 1/2 cup sour cream
- 2 eggs
- 1 teaspoon vanilla extract
Instructions

Preheat the oven to 325°F (163°C).

In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to create the crust.

In a separate bowl, beat the cream cheese and sugar until smooth. Add the sour cream, ube halaya, eggs, and vanilla extract. Mix until well combined.

Pour the filling over the graham cracker crust in the springform pan.

Bake for 60 minutes, or until the center is set but still slightly jiggly.

Remove from the oven and let it cool completely in the pan.

Once cooled, refrigerate for at least 4 hours or overnight before serving.

Remove the cheesecake from the springform pan, slice, and enjoy!
